His career has found him working in some of Sydney’s best restaurants and hotels. Working with great chefs and managing kitchen teams large and small, recently leaving his post as executive chef within the Accor Hotels Group to pursue an opportunity in the health food space.James has a real passion for fresh produce, prepared and served simply, creating balanced meals with food product as close to its natural state as possible. “I enjoy cooking for people who have made a commitment to eat for their health; this encourages creativity in the kitchen and often provides the most enjoyment for the chefs and our guests”.
